Most people who are very sensitive to gluten do not use a lot of gluten-free products, including gluten-free flours and starches. As a general rule, the average celiac can handle an occasional product that tests up to 20 ppm, but super sensitives will typically react to that much gluten.

I try to stick to products that test at 5 to 10 ppm, or less, when I can get them. However, I'm not so sensitive that I have to make my own ketchup, mustard, and mayo yet. When it comes to products, how much you eat at one sitting, and how often you eat them, plays a huge role is what you can tolerate.

The aim is to avoid as much processed food as possible, and move in the direction of a whole foods diet, but that isn't always practical. So, on this page, you'll find links to reviews of products we have personally tried, products that might be coming out soon or just did, product lists (including brand names), and general product information to help you discern which products are best for you and which products are better to avoid.
